T-16 hours

Alright, well, bags are officially packed and boarding passes are printed! 
Had a cookout with the fam tonight...probably the last time I will eat curry turkey burgers, smoked gouda mac & cheese, broccoli salad and mocha mousse for the next 3.5 weeks. But I could be wrong. Maybe the culinary scene in Kenya is booming. We are about to find out :) 
Now all I have to do is get a good night's rest, say a few extra prayers and - of course - eat a solid breakfast before this crazy journey begins....

Created some nutrition handouts as well (still channeling my inner intern)...hopefully I can use them, but will definitely have to assess the situation/community first ;)



So this is what blogging is like?!

Ok, so I'm new to this whole blogging thing. 
Generally, I go old-school on these kinds of trips and frantically write every memory down in my little paper journal at night before I forget. It takes hours and - let's be honest - I can hardly read my handwriting at some points in time. (Not to mention I get the "fell-asleep-while-writing" lines all over my pages.) 
I love the nostalgia of holding a journal and re-living those memories...and more importantly, one of my favorite parts about leaving the country is leaving all the clutter, technology and stress with it. BUT, after receiving requests of e-mail, facebook and phone updates, I decided it was time to cave and use some technology this time around...for the sake of letting you all stay in the loop and follow me on this adventure. Enjoy!
